REFINING,
AGEING AND THE PRODUCTS
Strict traditional methods
are combined with the most modern equipment for the refining
and ageing processes: steel tanks preserve the freshness
of both red and white wines, including Gavignano Bianco
Toscano (ITG classification) obtained from Chardonnay
and Sauvignon Blanc grapes, and Santa Sofia rosso
Toscano (IGT classification) obtained from Sangiovese
grapes, giving them a freshness, smoothness and bouquet
which make them excellent wines for any occasion. Oak
barrels are used for mellowing wines like Chianti
Rufina Riserva TRAVIGNOLI, aged in these barrels for
a year and a half and then in bottles for six months.
The famous barriques are used for Tegolaia,a wine
made from Cabernet Sauvignon and Sangiovese, aged for
a year, and in 2000 a new product, Calice del Conte
will be produced from Merlot and Cabernet Sauvignon aged
for a year in barriques and six months in bottles. In
the area reserved for Vin Santo production, the grapes
are left to dry and the Vin Santo TRAVIGNOLI, is
then obtained using traditional procedures and aged for
five years in small kegs. In the bottling plant, a modern
cooling system permits excellent settling of the bottled
wine. Every year approximately 300,000 bottles leave the
plant, most of which are Chianti Rufina TRAVIGNOLI,
a smooth, fragrant red which is put on the market a year
after the grapes are harvested.

OIL
TRAVIGNOLI Vineyards also
produces between 60 and 70 quintals of extra virgin olive
oil; the best part of this is bottled - approximately
10,000 bottles and is sold as Laudemio: extra virgin
olive oil. Laudemio is a highly special and selected product,
a "different" extra virgin olive oil which is the result
of early hand picking of olives and milling according
to strict regulations governing the olive groves, harvesting,
milling and storage up to bottling to protect the quality
of this oil.
